Almond Tofu is an elegant dessert from Genshin Impact, a favorite of Ningguang and other Liyue heroes. Despite the name it isn't soy tofu but a delicate almond-flavored milk jelly served cold. In the game it restores the party's health; in real life it's made from five simple ingredients and sets in the fridge.

Bloom the gelatin
Soak the gelatin in 50 ml of cold water for 5–10 minutes until it swells.

Warm the milk
Heat the milk with sugar without boiling and stir until the sugar dissolves.

Add the gelatin
Off the heat, add the bloomed gelatin and stir until fully dissolved.

Add the almond
Pour in the almond extract and stir.

Chill
Pour into molds and refrigerate for at least 3 hours until set.

Before serving, cut into diamonds and garnish with almond flakes.
