History of the dish
The turnip was the main root vegetable in Europe and Japan for thousands of years. Only in the 18th century did the potato displace it. In Russian cuisine 'steamed turnip' is an archaic dish; in Japanese cuisine kabu is a classic pickle.
Key ingredients
Turnip, butter, salt, pepper, fresh thyme. For Japanese kabu tsukemono: turnip, rice vinegar, sugar, salt, yuzu or lemon.
How to cook at home
Dice the turnip and boil until soft. Drain, add butter and mash. For tsukemono — rub the turnip with salt, leave 30 min, squeeze dry, pour over the marinade and leave overnight.
