👩‍🍳 Method

  1. 1

    The base

Heat the oil in a pot. Fry the finely chopped onion for 5 minutes until soft, add garlic and grated ginger, cook for another minute.

  2. 2

    Simmering

Add diced pumpkin and carrots. Sprinkle with turmeric and stir. Pour in the stock and simmer on medium heat for 20 minutes until the vegetables are tender.

  3. 3

    Blending

Remove from heat and blend with an immersion blender until completely smooth.

  4. 4

    Finishing

Return to the heat, stir in the coconut milk, season with salt and pepper. Warm through for 2–3 minutes without boiling.

  5. 5

    Serving

Ladle into bowls and top with toasted pumpkin seeds.

💡 Tips

  • 💡

The soup comes out thicker if you hold back some stock before blending and add it to taste afterwards.

  • 💡

Coconut milk can be swapped for cream — the flavor will be softer and creamier.
