Witcher's Beef Stew with Dark Ale
A thick, hearty stew of beef braised in dark ale with vegetables — Continent tavern food from The Witcher.
In the taverns of the Continent Geralt most often orders a bowl of thick stew and a mug of ale. This dish brings both together: beef slowly braised in dark beer with carrot, onion and potato until the meat is tender and the sauce rich and dark. Hearty, simple food to fuel up before a monster hunt.

Prep the beef
Cut the beef into large cubes and dust with flour.

Sear the beef
Sear the beef in hot oil on all sides until browned and transfer to a pot.

Fry the vegetables
In the same pan fry the chopped onion and carrot for 5 minutes and add to the meat.

Add the ale
Pour in the dark beer, add bay leaf, salt and pepper and bring to a boil.

Braise the meat
Lower the heat and braise covered for 1 hour until the meat is tender.

Add the potato
Add the diced potato and braise for another 25–30 minutes until done.

Serve
Let the stew rest for 10 minutes covered and serve with bread.

Use a slightly bitter dark beer — the alcohol cooks off during the long braise, leaving a deeper flavor.
