In the world of ninja there is no dish more iconic than the ramen from the Ichiraku stand — Naruto would happily eat bowl after bowl. Here is a home version of the classic shoyu ramen: no need to simmer the broth for a day, a couple of hours is enough, and the flavor comes out rich and warming, just right after a hard mission.

Broth
Cover the chicken with cold water (1.5 l), bring to a boil, skim off the foam and simmer gently for 1.5–2 hours with crushed garlic and ginger slices.

Chashu pork
Roll the pork belly, tie it, and braise for 1 hour in a mix of soy sauce, mirin and 200 ml water — this is the chashu.

Marinated eggs
Boil the eggs for exactly 6.5 minutes, cool in ice water, peel and marinate for 30 minutes in the chashu sauce.

Bowl base
Strain the broth and stir in 4–5 tbsp of the chashu sauce to taste — this is the base of the bowl (tare + broth).

Noodles
Cook the noodles strictly per the package, drain and immediately divide into warm bowls.

Assemble
Pour the hot broth over the noodles, add chashu slices, half an egg, green onion and nori. Serve at once.
