In the world of Naruto, dango is the signature treat of Mitarashi Anko, who loves it so much she shares a name with the most famous sauce. These skewered dumplings pop up constantly in Konoha's teahouses, where shinobi unwind between missions. We make classic mitarashi dango with a glossy soy glaze, plus an optional three-color hanami version.

Dough
Mix the rice flour with sugar, pour in the warm water and knead a smooth dough. It should be soft but not sticky — about the firmness of an earlobe.

Shape
Divide the dough into equal pieces and roll about 16 even balls, 2-2.5 cm across. Keep them the same size so they cook evenly.

Boil
Drop the balls into boiling water and cook for 3-4 minutes. Once they float, let them simmer one more minute until springy.

Ice bath
Lift the balls out with a slotted spoon and plunge them into ice water right away. This makes them chewy and stops them sticking.

Skewer
Pat the balls dry and thread 3-4 onto each wooden skewer. A classic dango serving is three or four balls in a row.

Sauce
In a saucepan combine soy sauce, sugar, mirin, water and cornstarch. Heat over medium, stirring constantly, until the sauce thickens and turns glossy.

Optionally toast the dango lightly in a dry pan or over a flame for 1-2 minutes — this adds the faint smoky note of Konoha's teahouses.

Assemble
Spoon the warm mitarashi sauce over the skewers and let it drip down the balls. Serve immediately while the dango are soft, with a cup of green tea.
