Shawarma is Levantine street food made from thin layers of marinated meat (chicken, lamb, or a mix), slow-roasted on a vertical rotisserie. The name comes from the Turkish "çevirme" — "turning" — and the cooking method itself, stacking meat on a vertical spit and shaving off thin slices as they cook, links shawarma to Turkish doner kebab and Greek gyros: close relatives of the same street-wrap family. What sets Levantine shawarma apart is its distinctive marinade of yogurt, garlic, lemon and spices like cumin, paprika and turmeric, plus the essential toum sauce — an emulsion of garlic, oil and lemon juice whipped into an airy, mayonnaise-like texture.
