Soft, melt-in-the-mouth cream fudge — the very treat from the shelves of Honeydukes in Hogsmeade.

Honeydukes is the finest sweet shop in Hogsmeade, where Hogwarts students sneak off for candy from their third year. Among the toffees, chocolate frogs and sugar quills, blocks of creamy fudge always sit in the window. We make a classic English fudge: from just sugar, cream, condensed milk and butter it turns out dense yet tender and literally melts on your tongue.

Prep the pan
Line an 18×18 cm square pan with parchment, leaving an overhang to lift the fudge out later.

Dissolve the sugar
In a heavy-bottomed pan over low heat melt the butter, then add sugar, condensed milk, cream and milk. Stir until the sugar fully dissolves.

Boil to soft-ball
Raise the heat to medium and bring to a boil. Cook, stirring constantly, for 12–15 minutes to 116 °C (the soft-ball stage).

Beat the fudge
Off the heat, add vanilla and salt. Beat vigorously with a spatula for 5–8 minutes until the mixture thickens and loses its shine.

Pour and set
Pour the fudge into the pan, smooth the top and let it cool to room temperature.

Chill and cut
Chill for 2–3 hours, then lift out by the parchment and cut into neat squares, just like in the Honeydukes window.
