Rub the cold butter into the flour, icing sugar and salt until crumbly, add the egg and quickly bring the dough together into a ball. Wrap and chill for 30 minutes.

Roll out most of the dough and line a 22-24 cm tart tin with sides. Save the trimmings for the lattice. Prick the base with a fork.

Filling
Warm the golden syrup slightly so it flows, then mix it with the breadcrumbs, lemon zest, lemon juice and cream. Let the crumbs soak for 5 minutes.

Assemble
Pour the filling into the shell and level it. Cut the trimmings into strips and lay them in a lattice on top, pressing the edges to seal.

Bake at 180 °C for about 35-40 minutes, until the lattice is golden and the filling is set at the edges but still slightly wobbly in the center.

Serve
Let the tart cool completely — the filling will thicken and turn gooey. Serve at room temperature with a scoop of vanilla ice cream or custard.
