History of the dish
Pad thai did not become a national dish by accident: in the 1930s–40s the Thai government actively promoted it to develop national identity and save rice. The result is one of the world's most recognisable dishes.
Key ingredients
Rice noodles (soaked 30 min in warm water), sauce: tamarind paste, fish sauce, palm sugar. Egg, tofu or prawns, bean sprouts, spring onion, peanuts, lime.
How to cook at home
Mix the sauce in advance: adjust the sour/salty/sweet balance to taste. Stir-fry in small batches over maximum heat. Break the egg directly into the wok and quickly toss with the noodles.
