Hazelnut Soup from Tangled: a Recipe from the Tower
In Tangled, Mother Gothel makes hazelnut soup — a cosy dish from the closed world of the tower. For Rapunzel it is one of the few flavours she has known since childhood, associated with safety (however false).
History and origin
Hazelnut is a traditional ingredient of European autumn and winter dishes. In the Middle Ages hazelnut soup or nut paste soup was common in France and Germany. It was warming and affordable even for the poor.
Key ingredients
Hazelnut soup: toast hazelnuts in a dry pan, rub off the skins. Fry onion and garlic. Blend with stock (chicken or vegetable). Add cream, nutmeg and thyme.
How to cook at home
To remove hazelnut skins easily, wrap the hot nuts in a tea towel and rub — the skins come off in 30 seconds. Blend the soup to absolute smoothness — hazelnut granules will spoil the texture.
