Hawaiian Poke Bowl: Tuna and Rice Recipe

The poke bowl is a Hawaiian tradition that became a global healthy-eating trend. Marinated raw tuna, rice, avocado, cucumber, edamame and poke sauce — fresh, filling and beautiful.

History of the dish

Poke (Hawaiian for 'to slice or cut') is a traditional Hawaiian fisherman's dish: tuna offcuts marinated with sea salt, sesame oil and seaweed. The modern rice and vegetable bowls became a culinary trend of the 2010s.

Key ingredients

Sashimi-grade fresh tuna, cubed, soy sauce, sesame oil, spring onion, sesame seeds, rice (Japanese or seasoned with rice vinegar), avocado, cucumber, edamame, pickled ginger, wakame seaweed.

How to cook at home

The tuna must be genuinely fresh — buy from a trusted fishmonger. Marinate for 10–15 minutes maximum (longer and the acid will 'cook' the fish). Assemble the bowl immediately before serving.
