History and origin

The Cuban sandwich appeared in Tampa, Florida, in the late 19th century among Cuban cigar factory workers. Classic recipe: Cuban bread, roast pork, ham, Swiss cheese, pickled cucumbers and mustard.

Key ingredients

Slow-roasted pork for cubano (mojo pernil): pork shoulder marinated in orange and lemon juice, garlic, cumin and oregano. Marinate for 12+ hours, braise at 150°C for 8 hours. Bread is pressed in a skillet or sandwich press.

How to cook at home

To press the sandwich, butter the outside of the bread and cook over medium heat under a heavy weight (another pan or a brick wrapped in foil) — 3–4 minutes each side. The cheese must melt completely.
