Winnie the Pooh Honey Cake

For Winnie the Pooh nothing matters more than a pot of honey, so a honey cake is the perfect treat in his honor. This cake comes out moist and fragrant thanks to real honey and a pinch of cinnamon, finished with a glossy honey glaze. It is made in one bowl — even a little bear could manage it.

Prep the tin
Heat the oven to 175 °C. Butter a loaf tin and dust it lightly with flour.

Butter and honey
Melt the butter with honey and sugar over low heat, stirring, until smooth. Let it cool slightly.

Wet base
Whisk the eggs and milk into the warm (not hot) mixture until smooth.

Dry mix
Sift the flour with baking powder, cinnamon and salt and fold gently into the batter — do not overmix.

Bake
Pour the batter into the tin and bake 40–45 minutes until a skewer comes out clean. Cool in the tin 10 minutes.

Honey glaze
Mix the icing sugar with 2 tbsp honey and a drop of water into a runny glaze, drizzle over the cooled cake and let it set.
