Lembas is the legendary elven waybread from The Lord of the Rings. The elves of Lothlorien give it to the Fellowship for the road: they say a single small piece is enough to sustain a grown traveler for a whole day. In the books and films lembas is wrapped in mallorn leaves and treasured like a jewel. The real-world "lembas" is usually made as soft buttery scone-cakes with honey — nourishing, fragrant and easy to carry. We make exactly that homemade version.

    Dry mix

    Combine the flour, sugar, baking powder and salt. Add the cold cubed butter and rub it into crumbs with your fingertips.

    Wet mix

    Separately whisk the milk, egg, honey, vanilla and lemon zest. Pour into the dry mix and quickly bring together a soft, slightly sticky dough — don't overwork it.

    Shape

    Roll the dough to a 2 cm thick sheet and cut it into 6-7 cm squares — the recognizable lembas shape.

    Mark

    With the back of a knife, score shallow crisscross diagonal lines on each square — the signature elven pattern.

    Bake

    Brush the tops with milk and bake at 190 °C for 15-18 minutes, until the cakes are golden and risen.

    Serve

    Cool on a rack. Lembas is delicious warm and keeps for a couple of days — wrap it in parchment or, like the elves, in a large leaf.
