Uncle Iroh is the wisest hero of Avatar, and besides peace his great passion is good tea. He calls jasmine tea the most wonderful drink in the world and brews it with care. This is a simple recipe in his spirit: fragrant jasmine tea with a spoon of honey that soothes and warms. Brew it slowly — as Iroh would say, rushing ruins everything.

Prepare the water
Boil the water and let it cool to 80 °C — boiling water makes jasmine tea bitter.

Brew the tea
Put the tea leaves in a pot and pour over the hot water.

Steep
Let it steep for 2–3 minutes — no longer, to keep the delicate jasmine aroma.

Serve
Strain, stir in honey to taste and serve hot.

Don't pour boiling water over jasmine tea — 75–80 °C is ideal, otherwise it turns bitter.

Don't over-steep: past 3 minutes the gentle jasmine aroma gives way to tannin bitterness.
