Pad see ew is a street-food hit of Thai cuisine: wide rice noodles stir-fried over high heat with egg, Chinese broccoli and soy sauce. Less famous than pad thai but no less delicious.
History of the dish
Pad see ew was brought to Thailand by Chinese immigrants in the early 20th century. The name means 'fried with soy sauce' — distinguishing it from pad thai with its tamarind base. Particularly popular in Bangkok.

Wide rice noodles (sen yai), dark and light soy sauce, oyster sauce, egg, Chinese broccoli (kai lan), garlic, oil.
How to cook at home
The secret is high heat and speed: do not stir the noodles constantly — let them catch and char slightly. This is called wok hei — the smoky fragrance from a screaming-hot wok.
