Key ingredients
Blueberry tart: a shortcrust base of butter, flour, sugar and egg. Filling: fresh or frozen blueberries, sugar, lemon juice and cornstarch to thicken. Blind-bake the tart shell, then add the filling.
How to cook at home
For the perfect crumbly shell keep the butter very cold and do not overwork the dough — it should barely come together. Bake with a weight (dried beans) for the first 15 minutes, then 5 minutes uncovered.
