Lomo saltado embodies Peru's chifa cuisine (Chinese-Peruvian fusion): beef tenderloin stir-fried with soy sauce, tomatoes, onion and chilli, served simultaneously with chips and rice.

History of the dish

Chifa resulted from the influence of Cantonese Chinese immigrants who arrived in Peru from the 19th century. They brought the wok and stir-fry technique, which merged with local produce (potato, aji amarillo, tomatoes), creating a unique cuisine.

Beef tenderloin in strips, onion, tomatoes (quartered), aji amarillo, soy sauce, red vinegar, chips, white rice, coriander, optional pisco.

How to cook at home

Stir-fry over maximum heat very quickly — 2–3 minutes. Vegetables should remain crisp. Add the chips directly to the wok at the last moment — they absorb the sauce but stay crispy outside.
