History and origin
Onigiri — rice balls or triangles with a filling — have existed in Japan since the 8th century. They appear in the diary of court lady Murasaki Shikibu. Originally made for travellers and soldiers.
Key ingredients
Onigiri need short-grain Japanese rice, cooked without salt or oil. Classic fillings: salted salmon, umeboshi (pickled plum), tuna with mayonnaise. Wrapped in a sheet of nori.
How to cook at home
Shape onigiri with wet, lightly salted hands — this prevents sticking and adds subtle flavour. Shape them straight away: cold rice holds its form less well. Add the nori just before eating so it stays crisp.
