Onigiri appear in almost every Ghibli film: in My Neighbor Totoro Satsuki shapes them for a picnic, in Princess Mononoke they feed warriors. This is Japanese fast food at its most simple and satisfying.

History and origin

Onigiri — rice balls or triangles with a filling — have existed in Japan since the 8th century. They appear in the diary of court lady Murasaki Shikibu. Originally made for travellers and soldiers.

Key ingredients

Onigiri need short-grain Japanese rice, cooked without salt or oil. Classic fillings: salted salmon, umeboshi (pickled plum), tuna with mayonnaise. Wrapped in a sheet of nori.

How to cook at home

Shape onigiri with wet, lightly salted hands — this prevents sticking and adds subtle flavour. Shape them straight away: cold rice holds its form less well. Add the nori just before eating so it stays crisp.

Try this recipe at home — it's much easier than it looks and will make you feel part of your favourite universe.
