The word 'doner' means 'turning' — meat is packed in dense layers on a vertical spit and the browned slices are shaved straight into flatbread or a bun. At home a pan or oven replaces the spit, and the flavor comes from a spice marinade with paprika, cumin and sumac. Add fresh vegetables and a couple of sauces, and you get a hearty, juicy doner as good as the street version.

    Cut the meat into thin strips. Mix yogurt, paprika, cumin, sumac, crushed garlic, oil, salt and pepper, pour over the meat and marinate for at least 1 hour.

    Heat a pan over high heat and fry the meat in batches for 4–5 minutes until the edges brown and an appetizing crust forms.

    Slice the tomatoes and cucumber, cut the onion into thin half-rings and shred the cabbage. For a tang, marinate the onion with a pinch of sumac.

    Warm the flatbread

    Warm the flatbread on a dry pan so it becomes soft and pliable and rolls easily without cracking.

    Assemble

    Layer the vegetables and meat on the flatbread and drizzle generously with the sauces. Roll tightly, optionally sear the seam on a dry pan, and serve hot.
