History and origin

Jiaozi have been made in China for more than two thousand years at New Year. Their shape resembles gold ingots yuanbao — symbols of wealth and good fortune. By tradition a coin is hidden in one dumpling: whoever finds it will have luck all year.

Key ingredients

Jiaozi dough: wheat flour and hot water in a 2:1 ratio. Filling: pork, Chinese cabbage (napa), ginger, soy sauce, sesame oil and spring onion. Seal by pinching the edges into a pleat.

How to cook at home

Shape jiaozi immediately after rolling before the dough dries out. Boil in water: when the dumplings rise to the surface, add a cup of cold water and wait for it to return to the boil — repeat three times.
